Effective primarily as a fungistat, sorbic acid is added to sweet wines. Although a generally effective inhibitor of fermentative yeasts, sorbic acid has little inhibitory activity toward lactic acid bacteria, acetic acid bacteria, or oxidative film forming yeast.
